Melissa's Cookbook - Chopped Salad

I enjoy salads every once in awhile. Sometimes a little bit of crisp veggies make a yummy lunch. Lately I have been eating sandwiches, {thank God for gluten-free bread!!} but it felt like a rut. While on Twitter, Candace Cameron Bure mention a chopped salad she makes for her family for dinner. She posted a picture of it after so many people asked about it. Then, she posted the recipe on Facebook. SO incredibly simple but looked very tasty. Here is her recipe and my tweaked version is below.

{Check her recipe for amounts, I just made enough for two days of salad for me. P.S. I know my photos stink, maybe one day I will have my fancy, schmancy camera! LoL}


Wash and chop broccoli into bite-sized pieces. (I used one small bunch.)



Wash and quarter small handful of radishes. (My tweak!)



Wash and chop yellow bell pepper into bite-sized pieces.



Wash small handful of snap peas. (My tweak!)



Wash and chop a tomato into bite-sized pieces.



Peel and chop an avocado into bite-sized pieces. (If you don’t like avocado, leave it out. I love it but wouldn’t put it in the next time because it turns brown too fast.)



Wash a few handfuls of spinach. Dry between two paper towels. (You could use lettuce instead if you aren’t a fresh spinach person.)



Add in any other raw veggies YOU like. Candace puts raw corn in hers. I love corn on the cob but canNOT stand corn in my food. LoL She also adds deli sliced meats but I have to watch those for gluten.


TOSS!!


Plate your salad. Instead of the olive oil, which I think makes the salad greasy, I used 2 teaspoons balsamic vinegar. I also chopped 2 hard boiled eggs for protein. A sprinkle of parmesan cheese and it was ready!



I really enjoyed this salad, such a light meal for the summer. Can’t wait to make it again!

My Girly-girl Wreath

Two points to this craft post:


Number 1: When Hubby and I move, I am getting my own room. My own CRAFT room. I’ve always wanted a room with a crafting area and a separate area for my sewing machine. You know, in case I ever learn to sew.


Number 2: I absolutely LOVE the color PINK!! And not just any pink but HOT PINK!! (Hubby’s not too thrilled about that one.)


Last Christmas I was walking through the Christmas decoration aisle at my local “we have everything you need and more” store. I saw hot pink mini disco-looking balls for a mini tree. I’m Christmas traditional so I would never use them for my tree. But I loved the color so much that I couldn’t pass them up. Later, at another store, I saw a glittery hot pink bow that I had to have, well, because it was pink. I decided to combine my treasures and make a wreath, for the craft room I will have one day.


I bought a 10-inch wreath at the dollar store. But I didn’t want the bleached wood look for my wreath...



...so I sprayed painted it silver. I also remembered why I hate using spray paint. STINKY!



Then I took sheer pink ribbon I found for 50 cents at my crafts store and criss-crossed it all around the wreath. It reminds me of ballet slippers laced up. LoL



I used that same ribbon and tied the little disco balls to the wreath. SPARKLY!!


Then I added the big, glittery bow to one side. Now it just needs a wall to hang on! LoL
